Mozzarella Stuffed Meatballs
Ingredients: •1 lb of ground Kobe beef (or lean ground beef). •1 lb of ground sweet Italian sausage. •1 lb of hot ground Italian sausage. •1 cup of Italian seasoned breadcrumbs. •1 finely chopped yellow onion. •1/2 cup of fresh chopped Italian curly parsley. •1 tsp dried oregano. •Creole seasoning (optional). •Salt & black pepper. •1 egg. •1 block of mozzarella cheese. •2 jars or your favorite sauce. (or homemade sauce is always best!)
Recipe: Combine all of the ingredients above (set aside sauce & cut mozzarella into tiny blocks to use later) Form your meatballs. You’ll want them to be big enough to stuff the block of mozzarella inside. Stuff them & form the meat around the cheese. Turn your crockpot on high setting. Line your crock pot with your favorite sauce. Place meatballs over the sauce. Cover with remaining sauce and cook about 1.5-2 hours until meatballs are fully cooked.
Serve with your favorite pasta & enjoy!

Blackened Brown Butter Basted Salmon
Ingredients: •Salmon filets (I prefer skin on). •Your favorite blackening seasoning (I like Paul Prudhomme’s Red Fish Blackening seasoning). •Olive oil. •Butter.
Recipe: Preheat oven to 350°. Clean & scale fish. Pat dry. Season generously. Preheat your cast iron skillet to med-high. Drizzle in a little olive oil. Add in about 2 tbsp of butter. Place salmon season side down for about 1-2 minutes to get a nice sear. Carefully flip salmon over when you begin to see the fish turn white on the sides. Continue cooking skin side down for an another 2-3 minutes while tossing melted browned butter over the top of your salmon with a spoon. Remove from stove top & transfer fish in cast iron skillet to your oven & finish cooking for an additional 7-10 minutes depending on the size of fish.

Kelly’s Hibachi Bowl
Ingredients: •Steak of your choice (I used Filet Mignon). •Shrimp (Red Argentine or Colossal). •About 4 cups of precooked white rice (preferably Jasmine or Basmati). •3 eggs (scrambled). •1 cup of chopped yellow onion. •1/2 cup of chopped scallions (green onions). •1 cup of peas (optional). •1 cup of chopped carrots (optional). •Sesame oil. •Soy sauce. • Salt & Pepper. •Minced garlic. •Salted butter. •Garlic powder. •Cayenne Pepper. •Blackening seasoning. •Olive oil. •1 cup of mushrooms (sliced). •1 onion (sliced). •1 large zucchini (sliced)
(I cook my rice a few hours ahead of time or the day before. 1 cup of rice to 2 cups of water. Put the rice in the pot, add my water, about a teaspoon of olive oil & a little salt. Bring it to a boil & cover tightly, reduce the heat and simmer on low for about 30 minutes. Let the rice cool down and then refrigerate until later.)
Recipe for Garlic Butter: 1 stick of softened salted butter, 1 tbsp of minced garlic and 1 tbsp of soy sauce. Mix together and viola!
Recipe for Steak: Take out your steak and allow it to reach room temp. Season with salt (I prefer pink Himalayan salt), black pepper, garlic powder, lightly dust with cayenne pepper and rub everything in on both sides. In a hot pan (I used a cast iron skillet), drizzle a little olive oil & add about a tbsp of butter. Sear both sides of your steak until you reach tour desired crust, a couple minutes on each side is all I did for these. Add a little garlic butter to your pan and toss it over the steaks a few times with a spoon.
Recipe for Shrimp: Clean & devein shrimp and season both sides generously with blackening seasoning. Sauté in a pan with a little olive oil and garlic butter until done.
Recipe for Fried Rice: I begin by scrambling 3 eggs together and fry in sesame oil. Set aside. Then you add 1 cup of chopped yellow onion, 1 cup of peas (optional) 1 cup of chopped carrots (optional) and 1/2 cup of scallions (green onions), sauté them for a minute in garlic butter until the onions start to become translucent. Add about a teaspoon of sesame oil to your pan, more garlic butter. Start adding in the 4 cups of rice by the handful crumbling it in so it doesn’t stick together. Add your egg back in, continue folding the ingredients together. Add your soy sauce, salt & pepper to taste.
Recipe for Veggies: Sauté in sesame oil & garlic butter, season to taste.
